You might want to buy our natural and organic umeboshi right away. Okay, you might say we would say that. But trust us: making your own authentic umeboshi is not easy! Here’s how the process tends to go:

Once ripened over several months, the “ume” plums are then handpicked and traditionally pickled with sea salt. These are then sundried for several days in a secure environment under the hot mid-summer sun before finally… being re-pickled! This time, sisho leaves are the crucial and unique pickling ingredient that gives them their unmistakable deep and tangy taste. They’re then carefully sealed, packed up, and shipped off ready for food lovers like yourself to savour!
