About Tartaric Acid

Tartaric Acid is an essential element of country wine and champagne making, found naturally in many plants e.g. grapes & bananas.

It is widely used to lower the pH of fermenting "must" to a level where many undesirable spoilage bacteria cannot live and also acts as a preservative after fermentation.

Tartaric acid provides some of the tartness in the wine, along with citric and malic acids.
