Are you a brownie or a blondie?
These delicious white chocolate, macadamia and apricot blondies are quick and easy to make and will be enjoyed by the whole family. The combination of white chocolate and apricot is super dreamy with a welcome crunch from the creamiest nuts available.
They can easily be made vegan with the use of Vego white chocolate and replace the raw honey with agave.

Preheat the oven to 170C and grease and line a 9x9 inch tin with baking paper.

Place the aquafaba into a food processor and whizz up for 1 minute until frothy and thick.

Add the nut butter, honey, coconut sugar, oat flour, ground almonds, baking powder and apple cider vinegar and whizz up again until quite a thick and smooth has formed.

Stir in most of the apricots, macadamias and chocolate then spread into the tin. Scatter over the rest of the ingredients on top and bake for 15-20 minutes until firmed up and golden.

Leave to cool for 20 minutes then cut into 9-12 bars. Enjoy!

- 100g Raw honey (or agave)
- 100g Coconut sugar
- Liquid from x1 Can Chickpeas
- 100g Wholegrain Oat flour
- 100g Ground almonds
- 1 tsp Baking powder
- 1 tsp Apple cider vinegar
- 75g Chopped dried apricots
- 75g Macadamia nuts (chopped)
- 50 - 75g White chocolate (or vegan alternative)
