Vegan mince stuffing is the perfect sandwich filler for a hearty lunch. This recipe uses TVP soya mince as the main source of protein.

You can add this to sandwiches and wraps, pasta, rice or use as stuffing

    To prepare, dice all of your vegetables and chilli into small pieces

    Soak the vegetable protein mince in 1 cup of water for 15 min.

  • 3.

    Once the TVP mince has doubled in size, use your hands, squeeze the excess water and set aside

  • 4.

    In a frying pan, add the olive oil, minced garlic and cumin powder and saute for 1 minute

  • 5.

    Add the diced onion, tomato and carrots and saute until the carrots are soft

  • 6.

    Add green chilli and cook for a further 5 minutes

  • 7.

    Once all the vegetables are cooked completely, add the TVP mince and saute until cooked through

  • 8.

    Season with a touch of salt and pepper

  • 9.

    Serve immediately in a toasted sandwich or wrap filling and enjoy!
