Delicious vegan festive cookies by Romy are easy to make and are truly addictive.

Make for the Christmas season or tie with a pretty bow for a hamper treat for a loved one.

  • 1.

    Preheat your oven to 180 degrees

  • 2.

    Prepare your flax egg by adding 5tbsp water to 3 tbsp ground linseed (flaxseed), stir and set aside for later

  • 3.

    In the meantime, shred your chocolate using a sharp knife

  • 4.

    In a bowl, add the flour, baking powder, ground hazelnuts and cacao powder

  • 5.

    In a separate bowl, whisk the soft vegan butter,with coconut nectar sugar and the flax egg you made earlier

  • 6.

    Add the wet ingredients to the dry ingredients and combine

  • 7.

    Line a baking tray with parchment paper

  • 8.

    Use a teaspoon and take 2 teaspoons from the mixture and roll in your hands

  • 9.

    Place on the baking tray and flatten slightly

  • 10.

    Repeat until all the mixture is gone leaving enough space between each cookie as the cookies will expand during cooking

  • 11.

    Place in the middle of the oven and bake for 12-15 minutes

  • 12.

    Remove from the oven and leave on the baking tray to cool completely

  • 13.

    Remove from the parchment paper and enjoy!
