An easy vegan twist on classic mayo, courtesy of 'Oh My Veggies'!

    Soak the cashews in water for 2-4 hours.

    Drain and rinse the cashews, then chuck in a blender with the stock and lemon juice.

    Add more water/stock if you would like a thinner mayo and add salt if required.
