Method

Soak the cashews in water for 2-4 hours.

Drain and rinse the cashews, then chuck in a blender with the stock and lemon juice.

Add more water/stock if you would like a thinner mayo and add salt if required.

Add any extras you like, such as fresh herbs (chives, thyme, rosemary), hot sauce, garlic, pesto, mustard,

- 1/4 Cup Vegetable Stock
- 2 Tbsp Lemon Juice
- Optional :
- 1 Tbsp Fresh Mixed Herbs
- 1 Tsp Pesto
- A few Drops Hot Sauce
