Vegan carrot cake muffins are super easy to make and will be loved by everyone!

  • 1.

    Preheat the oven to 180C and lightly grease a 6 hole muffin tin.

  • 2.

    Mix together the flour, ground almonds, sugar, spices and baking powder in a bowl.

  • 3.

    Whisk together the aquafaba, milk and vanilla then pour into the dry ingredients and mix to form a batter.

  • 4.

    Stir in the grated carrot and raisins.

  • 5.

    Spoon between the muffin tins to reach the top and bake for 15-20 minutes until risen.

  • 6.

    Leave to cool then pop out of the tin and onto a wire rack.

  • 7.

    Whisk together the icing sugar with a dash of lemon juice and enough water to be able to drizzle over the muffins.
