Vegan caramel and chocolate chunk brownies are to die for! Completely dairy free and perfect for a vegan treat after meals or for an afternoon sweet treat to keep you going the rest of the day

Method
  • 1.

    Preheat the oven to 180C and grease and line a 9x9in baking tin.

  • 2.

    Gently melt the dark chocolate and oil then set aside for 5 minutes to cool. Whisk in the flax eggs, milk and vanilla.

  • 3.

    Place the coconut milk and sugar in a pan, bring to the boil then simmer for 5-8 minutes, whisking regularly, to thicken and create a caramel sauce. Remove from the heat and set aside.

  • 4.

    Mix together the flour, almonds, sugar, carob powder and baking powder in a bowl.

  • 5.

    Pour in the chocolate mixture plus 4 tablespoons of the caramel sauce and stir to combine. Spread the mixture into the tin and smooth out evenly.

  • 6.

    Drizzle over the caramel then scatter over the chocolate chunks and press down gently.

  • 7.

    Bake for 25 minutes until firmed up then leave to cool and cut into 9-12.
