Warming spices and roasted vegetables this dish is perfect for vegans and vegetarians.

Serve on its own or with nutty brown rice for a delicious and nutritious meal.

  • 1.

    Preheat oven to 220C/200C fan/Gas 7

  • 2.

    Prepare the vegetables by cutting the cauliflower into florets and the red onion into thin slices

  • 3.

    Lay the cauliflower florets and red onion on baking tray

  • 4.

    Ina mixing bowl, add the melted coconut oil, chill powder, ground coriander, ground cumin, salt and crushed garlic cloves and combine well

  • 5.

    Pour over the cauliflower and red onion and toss on the tray to coat the vegetables

  • 6.

    Roast in the oven for around 20-15 minutes until golden

  • 7.

    Add the chickpeas and cashews to the tray and roast for a further 5 minutes

  • 8.

    Once golden, remove from the oven and transfer to a serving dish

  • 9.

    Top with fresh coriander and chilli and serve immediately

  • 10.
