Sweet Potato and Buckwheat Burgers

With barbecue season fast approaching it's the ideal time to try out new burger recipes that are suitable vegans and vegetarians.

These sweet potato and buckwheat burgers are easy to make and are great topped with a slice of vegan cheese, smashed avocado and tomato relish and pop in a gluten free roll for the ultimate burger! Serve with sweet potato fries and a fresh garden salad to truly satisfy those taste buds.

Method
  • 1.

    Prep all ingredients - grate carrot, finely chop onions, cube sweet potatoes and measure out all other ingredients.

  • 2.

    Preheat oven to 170 degrees.

  • 3.

    Boil the sweet potatoes in hot water until soft enough to mash - mash with a fork and set aside to use later.

  • 4.

    Dry roast the raw buckwheat for a few minutes and keep tossing as they are toasting. Be careful not to burn during toasting.

  • 5.

    Once toasted, add the water and salt and bring to the boil, once boiling reduce heat and continue to cook for around 10-15 minutes until the grains are soft. Drain and set aside for later.

  • 6.

    Saute finely chopped onion in a small amount of extra virgin olive oil until softened.

  • 7.

    Add the grated carrot in with the onion and continue to saute for a few minutes.

  • 8.

    Add spinach and stir in enough to wilt.

  • 9.

    Once everything is prepared it is time to make your burgers!

  • 10.

    In a large bowl, add the cooked buckwheat, mashed sweet potato, cooked carrots, onions and spinach, tahini, and tamari (or soy sauce) and form into burgers. This should make around 4-6 depending on the size of your burgers!

  • 11.

    Line a baking tray with parchment paper to prevent the burgers from sticking during cooking

  • 12.

    Place each of your burgers on the tray and bake for around 45 minutes depending on size. Turn half way through cooking until browned on both sides.

  • 13.

    If you are using vegan cheese, make sure you top the burgers with the cheese and place back in the oven for a further 5 minutes to achieve a delicious melted texture!

  • 14.

    Serve with smashed avocado, tomato relish, fresh salad and a burger bun to finish it off! Accompany with sweet potato fries for the perfect weekend treat and enjoy!
