I personally love all lentils, but the red ones are my favourite. They cook really fast and go slightly mushy, which makes the soup a bit thicker.

They are packed with fiber, protein, minerals and vitamins, yet still low in calories and almost no fat or cholesterol. This spicy lentil soup is also a great freezer filler… life’s a lot easier when you can come home to a nutritious and comforting meal that just needs heating.

    Rinse the lentils in cold water.

  • 2.

    In a pan, heat up a bit of coconut oil and add the diced onions, garlic and carrots.

  • 3.

    Fry for a couple of minutes, then add in the spices.

  • 4.

    Next add the lentils, tomatoes and pour in the stock.

  • 5.

    Bring to the boil, then simmer for 30 minutes or until the lentils are soft.

  • 6.

    Taste and adjust seasoning if needed before serving!

    think it coud be ok with a bit of tweaking

    I have not tried this as I avoid spicey foods like the plague, I will make this and add just a quarter amount of all ther spices to see how it goes
