These delicious & unique pancakes are quite simply chocolate and coconut heaven with a few healthy benefits too.

Method
  • 1.

    In a large mixing bowl, add the flour, baking powder, caster sugar, beetroot powder and coconut milk powder and mix to combine

  • 2.

    In a separate bowl, mix the egg, melted butter and coconut milk together

  • 3.

    Pour the wet ingredients into the dry ingredients and stir until thick and creamy without any lumps

  • 4.

    In a small bowl or jug, add the chocolate buttons and butter and melt in the microwave

  • 5.

    In the meantime, add the coconut oil to a pan and add a spoonful of batter and cook for around 30 seconds each side

  • 6.

    Each time a pancake is done, place on a plate and build a pancake stack

  • 7.

    Once all the batter is used up and you have a pancake stack, cover with melted chocolate and sprinkle with edible rose petals and freeze dried strawberry pieces.
