These Raw Chocolate & Caramelised Macadamias & Mulberries are ideal as a gift for friends, or a treat for yourself. The great thing with this recipe is you can change the nuts and mulberries to suit your personal taste and the recipe will stay the same (why not try almonds, other dried fruits or roasted coffee beans!). This recipe requires a handful of ingredients, is healthy, refined sugar free, vegan, raw, and suits a paleo diet. You’re welcome.

    Caramel Roasted Macadamias: Preheat the oven to 180. In a bowl melt the coconut oil over a larger bowl or saucepan of hot water. Once melted add the coconut sugar and salt and stir to combine. Add the macadamias and stir to coat. Place on an oven tray and put them into the oven for 12-15 minutes, stirring every 5 minutes to avoid burning (start on the following recipes whilst this ones cooking). Allow to cool on the tray.

    Raw White Chocolate Covered Macadamias & Mulberries: First add the coconut sugar and water to a dish over hot water to melt together (this helps the coconut mix with the cacao butter). Then add cacao butter drops and using a whisk or fork, stir over heat until melted. Remove from the heat and split the mixture in to 2 bowls – add mulberries to one, and macadamias to the other. Stir every 5 minutes while the mixtures slowly hardens as the chocolate returns to room temperature. Just before the mix is fully set, spread the macadamias and mulberries on plates to set and gently stir to keep them from clumping (to make for easy adding to jars later)

    Raw Chocolate Covered Macadamias & Mulberries: In a dish over hot water (not too hot just enough to make it melt slowly – you want to keep it raw to keep the goodness in) add cacao butter drops and using a whisk or fork stir until melted. Once melted add the sea salt, cacao powder and coconut sugar and stir to combine. Remove from the heat and split the mixture in to 2 bowls – add mulberries to one, and macadamias to the other. Stir every 5 minutes while the mixtures slowly hardens as the chocolate returns to room temperature. Just before the mix is fully set, spread the macadamias and mulberries on plates to set and gently stir to keep them from clumping. Gently pour any remaining chocolate over the plate to make for extra chunky chocolatey goodness. Once set add to jars and store at room temperature or in the fridge for up to one month (at least; these can also be stored in the freezer for up to 3 months).

  • 1 Tbsp Water
  • 1/2 Cup Raw Cacao Butter Drops
  • 1 Cup Mulberries
  • 1/2 Cup Raw Macadamia Nuts
  • 1 Pinch Sea Salt
  • - Raw Chocolate Covered Macadamias & Mulberries
  • 1 Cup Raw Cacao Butter Drops
  • 3/4 Cup Raw Cacao Powder
  • 1/2 Cup Coconut Sugar
  • 1 Cup Mulberries
  • 1/2 Cup Organic Macadamia nuts
  • 1 Pinch Sea Salt
