If you love brownies you will love these Raspberry Brownie Muffins. Made using oat flour and frozen raspberries for a healthier treat when you have sweet craving. Try warming up in the microwave and enjoy with dairy-free ice cream or homemade nice cream for an indulgent treat. Nice cream is simply made by freezing bananas then placing them in a blender, transferring to a container and refreezing. Once frozen scoop up and enjoy - simple and healthy! Recipe was made for us by the creative Spamella.

    Preheat oven to 180C

  • 2.

    Grease a 6 hole muffin tin or use muffin cases

  • 3.

    Combine the aquafaba, almond butter, raw honey and vanilla extract in a blender and put on high powder for 1 minute until frothy and creamy

  • 4.

    Add the carob powder (or use cocoa or cacao powder), oat flour, ground macadamia nuts, date sugar (or sugar alternative) and baking powder and continue to blend again in the blender creating a thick batter

  • 5.

    Stir in the raspberries

  • 6.

    Using a spoon share mixture between the 6 cases and sprinkle with chopped macadamia nuts

  • 7.

    Bake for 15-20 minutes until slightly firm

  • 8.

    Remove from oven and leave to cool in the tin before removing

  • 9.
