Another festive recipe from Romy - she is the queen of Christmas recipes and this one will not disappoint.  A completely alcohol free deliciously cremay eggnog - the perfect welcome drink on Christmas day.

    In a small bowl, add the cashew and cover with boiling water and set aside to soak for around 20 minutes

  • 2.

    Add all of the ingredients (apart from the non-alcoholic rum) to a high speed blender and blend on a high speed for around 5 minutes until the cashews are fully incorporated

  • 3.

    Use a nut-milk bag or a fine mesh and strain the nut pulp from the smooth and creamy eggnog over a bowl or saucepan

  • 4.

    Stir in the non-alcoholic rum at this point if you are using it

  • 5.

    Warm through (or serve cold) and sprinkle with cinnamon

  • 6.

    Keep refrigerated for up to a week
