No-Bake Spiced Pumpkin & Coconut Pie

With Thanksgiving growing in popularity in the UK over recent years, this is the perfect recipe to surprise your family with after a delicious meal together.

No baking involved and a yummy take on the traditional pumpkin pie recipes.

  • 1.

    For the base - Place the nuts into a high powered blender and whizz until broken down.

  • 2.

    Add the dates, oats, coconut oil, agave and mixed spice and pulse until combined (the mixture should be sticky and all stuck together well)

  • 3.

    Select a loose bottom tin (22cms) and pour the mixture in

  • 4.

    Press down firmly into the tin and up the sides using your hands and fingers to create a tart case

  • 5.

    Place in the fridge to chill whilst you make the filling

  • 6.

    Gently melt the creamed coconut in 50ml boiling water

  • 7.

    Place in a blender with all of the other ingredients for the filling and blend until completely smooth

  • 8.

    Remove the base from the fridge and top with the filling

  • 9.

    Smooth out evenly and decorate with pecans and walnuts

  • 10.

    Place in the fridge for around 2 hours (or more if time allows) until fully set

  • 11.

    Remove from the fridge and take out of the tin before slicing into 8-10 sections on a chopping board
