She's done it again! Spamella B has created these absolutely divine Mango, Lime & Coconut Tarts for us, and the best part... they require no baking!

The combination of healthy and wholesome ingredients result in this supurb sweet treat! Topped with elegant ingredients making them a vision of beauty, serve as a delightful dessert or simply a stylish snack... almost too good to eat!

Method
  • 1.

    For the tartlet cases: Remove stones from medjool dates and add to a food processor along with the desiccated coconut, macadamia nuts and coconut oil and blend well to create a thick, sticky mixture.

  • 2.

    Using 4-6 tart cases divide the mixture evenly between them and press the base down firmly and spread up the sides to create a case. Tip: Use your fingertips to press down and squidge into the shape of the tartlet tin.

  • 3.

    Place in the fridge to cool whilst making the filling.

  • 4.

    Add the coconut cream into a food blender along with the mango,, coconut flour, maple syrup, turmeric powder and the zest of two limes and blend to form a thick and creamy vibrant mixture.

  • 5.

    Remove tartlets from the fridge and spoon the filling mixture evenly into each case.

  • 6.

    Smooth filling evenly so that it is level before refrigerating.

  • 7.

    Decorate each tartlet with elegant toppings - edible dried rose petals, coconut chips and bee pollen

  • 8.

    Place in the fridge for at least an hour.

  • 9.

    After cooling, remove from the tins and enjoy!
