There is nothing nice than the smell of cinnamon granola baking in the oven! 

This healthy homemade granola is naturally sweetened with butternut squash and cinnamon purée, which also provides a nutrient boost. Guilt free, you can enjoy this as a topping with yoghurt but, a word of’s totally scrumptious, so do watch the portion sizes! Makes an ideal portable or after school snack

  • 1.

    Preheat the oven to 180 degrees and line with parchment paper to prevent sticking

  • 2.

    In a large bowl, combine all of the dry ingredients - coconut flakes, flaked almonds, seeds, pecans, ground almonds and oats

  • 3.

    In a blender, combine the cooked butternut squash or pumpkin puree, coconut oil, maple syrup, cinnamon and vanilla extract and blend together

  • 4.

    Add the wet ingredients to the dry ingredients and combine well

  • 5.

    Spread the granola thinly onto the baking tray (use two if needed)

  • 6.

    Bake for around 30-45 minutes checking every 10 minutes to avoid overcooking

  • 7.

    Once the granola is golden, remove from the oven and allow to cool

  • 8.

    Transfer to airtight containers and store in a cool cupboard for up to 2 weeks (if it lasts that long!)
