These cookies are an indulgence you can afford - dairy free and refined sugar free, but still delicious! They are so simple that you can easy throw them together and forget about them whilst they bake. They are also great for keen little bakers!
Try swapping the oat flour for barley flour for an easy flour alternative.

  • 1.

    Preheat the oven to 180 degrees Celsius and line a tray with baking paper.

  • 2.

    Add the ground hazelnuts, date syrup, chia seeds, oat flour, almond milk, porridge oats, coconut sugar, instant coffee and cacao powder to a bowl. Mix this until fully combined.

  • 3.

    Add in half of the chopped raw chocolate and stir through again. Make sure the chocolate chunks are dispersed throughout the mixture.

  • 4.

    Taking a tablespoon at a time, scoop the mixture and place on a baking tray. Do this until you have six big cookies.

  • 5.

    Taking the other half of the chocolate, place these on top of the cookies. Do the same with the chopped hazelnuts.

  • 6.

    Place these in the oven to bake for 20 minutes.
