
Hazelnut Mocha Cookies

Preheat the oven to 180 degrees Celsius and line a tray with baking paper.

Add the ground hazelnuts, date syrup, chia seeds, oat flour, almond milk, porridge oats, coconut sugar, instant coffee and cacao powder to a bowl. Mix this until fully combined.

Add in half of the chopped raw chocolate and stir through again. Make sure the chocolate chunks are dispersed throughout the mixture.

Taking a tablespoon at a time, scoop the mixture and place on a baking tray. Do this until you have six big cookies.

Taking the other half of the chocolate, place these on top of the cookies. Do the same with the chopped hazelnuts.

Place these in the oven to bake for 20 minutes.
- 170g Ground Hazelnuts
- 120g Date Syrup
- 20g Chia Seeds
- 10g Oat Flour
- 30ml Almond Milk
- 20g Porridge Oats
- 30g Date sugar (or alternative)
- 20g Carob Powder
- 70g Chopped Raw Chocolate
- 10g Chopped Hazelnuts
- 2 tsp Instant Coffee (add more if you prefer)
