
Easy Vegan, Refined Sugar and Gluten Free Cookies

These incredibly moreish easy bake cookies are free from refined sugar and gluten containing ingredients.
They are made from all natural ingredients and are subtly sweet thanks to the maple syrup and carob combination.
Ready in less than 30 minutes start to finish - winner!

Combine oats, brown rice flour, ground almonds, salt and carob powder in a large mixing bowl and stir to remove any clumps

Gently melt the coconut oil

Add coconut oil, pale syrup and almonds milk into the bowl of dry ingredients and stir to combine

Roughly chop the vegan chocolate and add to the mixing bowl

Combine well

Add a sheet of parchment paper (baking paper) to a baking tray to prevent the cookies from sticking. Alternatively you can spray a baking tray with light coconut oil in place of the baking paper

Using your hands, take a ball of the mixture and roll in your hands

Place on the baking tray and pat down gently to form a thick cookie shape

Repeat until all of the mixture has been used. Depending on the size of your cookies this makes between 9-12 cookies

Place in a preheated oven at 180 degrees for around 10-15 minutes checking occasionally. Cooking time will depend on the size of your cookies

Once golden and firm on the outside and edges, remove from the oven and leave on tray to cool for around 15 minutes

Remove gently from the tray and place on a cooling rack or enjoy warm and gooey with a cup of tea

Note: These cookies will firm up during cooling time
- 2 heaped cups Oats
- 1/8 cup Brown rice flour
- 1/4 cup Carob powder
- 1/2 cup Ground almonds
- 0.5 tsp Salt
- 5 tbsp Coconut oil
- 7 tbsp Maple syrup
- 2 tbsp Almond milk
- 50g-100g (depending on preference) Dark vegan chocolate
