Banana bread makes an incredible breakfast, snack or dessert and is great topped with almond butter and sprinkle with a pinch of salt! 

This recipe is completely vegan and contains an abundance of healthy ingredients that you will love!

  • 1.

    Preheat oven to 180C/375F and prepare a flax egg by mixing 1 tablespoon of flaxseed with 3 tablespoons of water and leave to thicken

  • 2.

    In the meantime, mash 3 large black peeled bananas with a fork

  • 3.

    Add the wet ingredients to the banana

  • 4.

    In a different bowl, combine the dry ingredients and gradually add them into the wet ingredients bowl

  • 5.

    Add dried fruit at this point if using

  • 6.

    Line a loaf tin with grease proof paper

  • 7.

    Pour in the thick mixture and decorate with banana

  • 8.

    Bake for around 45 minutes until golden brown - to check if it is baked completely, test by inserting a skewer, if it comes out clean it done (bake for longer if need be but be careful not to over bake)

  • 9.

    Remove from oven and allow to cool before slicing into portions

  • 10.

    Enjoy topped with almond butter for a delicious breakfast

  • 11.

    Note: Banana bread will keep in the fridge for around 5-6 days. Alternatively slice and store in the freezer and take out as you need it.
