Double Chocolate Granola Loaf

This mouth watering recipe is easy to do and produces a soft chocolate sponge topped with a delicious fudge layer topped and crunchy granola topping.

You could even adapt this recipe slightly to contain extra chocolate by adding chocolate chunks, or drops, to the sponge and granola parts to make it even more indulgent!

Method
  • 1.

    Preheat oven to 180 degrees

  • 2.

    Grease and line a loaf tin with baking parchment paper

  • 3.

    Mix together flaxseed and water and set aside for ten minutes to thicken

  • 4.

    Add 75ml maple syrup and the milk and stir well to combine

  • 5.

    Combine all of the dry ingredients for the sponge base in a large mixing bowl

  • 6.

    Add together the flaxseed mix and combine to form a batter

  • 7.

    Transfer to lined loaf tin and set aside

  • 8.

    In the meantime prepare the fudge layer by popping soaked medjool dates into a blender along with the cooked, chopped sweet potato, carob/cacao powder, nut butter, maple syrup and a pinch of sale and blend to create a thick gooey mixture

  • 9.

    Spread evenly over the sponge base mix

  • 10.

    Top with granola and chocolate chips

  • 11.

    Move to oven and bake for around 40 minutes (be sure to cover with foil half way through baking to prevent the granola from burning

  • 12.

    Remove from the oven and leave to cool completely before slicing into even slices

  • 13.

    Enjoy!
