Energy bars with a festive feel - packed with dried cranberries, pumpkin seeds, spices and natural sweeteners.

Perfect for snacking over the festive period - Your Thanksgiving and Christmas prayers answered!

  • 1.

    Preheat the oven to 160C and grease and line a 9x9in baking tin.

  • 2.

    Place the dates in a food processor with 50ml boiling water along with the coconut oil and nut butter and leave to soak/melt for 10 minutes

  • 3.

    Add the maple syrup, banana and vanilla and whizz up until smooth. Stir in the remaining ingredients and mix well.

  • 4.

    Spoon into the tin, spread out evenly and bake for 30 minutes until golden. Leave in the tin to cool completely (it will firm up) then cut into 9-12 bars.
