Method
  • 1.

    Preheat oven to 190 degrees (170 degrees for fan ovens)

  • 2.

    Combine all dry ingredients together with the chopped walnuts

  • 3.

    Grate courgette and add to a mixing bowl along with a touch of salt, the applesauce and the cider vinegar and combine well

  • 4.

    In a separate bowl whisk the three eggs until light and fluffy and then pour into the courgette mixture and combine well

  • 5.

    Once combined, add to the bowl of dry ingredients and mix gently

  • 6.

    Line a loaf tin with baking paper and pour in the mixture

  • 7.

    Transfer to preheated oven for 20 minutes before reducing the temperature slightly and continue to bake for around 30-40 minutes

  • 8.

    Remove from the oven and remove from tin by pulling out the baking paper and leave to cool before consuming

  • 9.

    Enjoy!
