Delicious and luxurious carob and raspberry muffins - carob has an intense chocolate flavour (but isn't really chocolate!) and the raspberries add a sharpness that pairs incredibly - give them a go!

Method
  • 1.

    Preheat the oven to 180C and lightly grease a 6-hole muffin tin

  • 2.

    Mix together the flour, date sugar, carob powder and baking powder in a bowl.

  • 3.

    Whisk together the apple puree, milk, melted coconut oil and vanilla then pour into the dry ingredients and mix well to combine.

  • 4.

    Fold in the raspberries.

  • 5.

    Divide the mixture between the holes to fill the top - sprinkle with freeze dried raspberries for decoration

  • 6.

    Bake for 15-20 minutes until risen and a skewer comes out clean
