  • 1.

First of all you need to prepare the fruit - cut the fruit into quarters and remove the flesh to leave the peel (around 5mm thick)

  • 2.

Take each section of the peel and slice up into strips

  • 3.

In a pan of cold water, place the orange and lemon peel and bring to the boil

  • 4.

Once boiling, leave to simmer for around 5-10 minutes

  • 5.

Drain the water and replace with fresh water and bring to the boil again

  • 6.

Leave to simmer for around 30 minutes

  • 7.

Drain the water through a sieve over a pan to reserve the water for later

  • 8.

Add the sugar to the pan of water and gently heat to dissolve the sugar and create a sugar syrup

  • 9.

Once again add the peel to the water (which is now a sugar syrup) and simmer for 30 minutes until soft

  • 10.

Once softened, turn off the heat and leave in the pan of sugar syrup to cool

  • 11.

Using a wire cooling rack over a baking tray, remove the peel one a time and lay on the rack in a single layer

  • 12.

Place in the oven at the lowest temperature to dry out

  • 13.

After 30 minutes, remove from the oven and sprinkle with sugar

  • 14.

Air dry for around an hour or more depending on your time

  • 15.

Once dried store in an airtight container
