
Candied Christmas Cookies

Why not add candied fruit to cookies this year - sure to be a hit with everyone in the family!
If you find that your friends and family don't really like fruit cake, then try making these delicious cookies and we guarantee they will be enjoyed!

In a large mixing bowl add the butter and sugar and beat until light and fluffy

Add egg and cream and continue to beat

Gradually mix in the flour, baking powder and spices and combine well

Add the candied fruits and combine well

5.
Create a log out of the cookie mixture, wrap in cling film and place in the freezer for 1 hour

Remove from the freezer and preheat oven to 170 degrees

Unwrap the cookie logs and use a sharp knife to slice into round cookies

Line a baking tray or grease well and add the cookies onto the tray

Place in the oven for around 10-15 minutes until bottoms are starting to brown

Remove and place on a cooling rack to cool

Enjoy with a glass of cold milk or stack a few together and tie with ribbon for the perfect hamper treat.
- 200g (1 cup) Softened butter
- 200g (1 cup) Granulated sugar
- 2 Large egg
- 150g (3/4 cups) Flour
- 1 tsp Baking powder
- 1 tsp Ceylon cinnamon (or other cinnamon)
- 0.5 tsp Ground ginger
- 0.5 tsp Ground nutmeg
- 100g Glace angelica
- 100g Red glace cherries
- 150g Mixed peel
- 100g (0.5 cups) Cream
