These bite-sized vegan cheesecakes and a great quick dessert which can be enjoyed by everyone. Made using natural and healthy ingredients these are both healthy and tasty. The great thing about these vegan cheesecakes is that they can be easily customised to suit your preferences it, be it sweet, plain or fruity.

Method
  • 1.

    In a food processor add the almonds and blend until you have finely ground almonds, then add the dates, cacao powder and 10g of melted coconut oil, and blend again until you have a sticky texture which clumbs together when you press it between you fingers.

    Get your cupcake or muffin tray, cut strips of parchment paper about 14cm long and 1.5cm wide. Grease the tins with some form of oil or grease to help remove the cheesecake once set. I used spray oil. Then separate the almond and date mixture evening throughout the tins with the parchment paper at the bottom and press down using a teaspoon until the base is nice a firm. Place this in the freezer to set while you make the filling.

    Add the cashews, coconut milk, 80g of melted coconut oil, juiced lemon and blend until the mixture is creamy and smooth. You can use the dark agave syrup but we used the light not to effect the colour of the mixture too much. Once blended taste and add any extras to match your proffered taste. Once finished pour this mixture evenly throughout the tins.

  • 4.

    For the caramel topping squeeze a small about of caramel on top of the cheesecake and swirl in using a cocktail stick or a cake tester. For the chocolate, topping melts the chocolate and the remaining 10g of coconut oil and mix in the same way as the caramel.

    Once the toppings have been added, place in the freezer for 4 hours. These cheesecakes can be eaten straight out the freezer or set on the side for a few minutes to allow them to thaw slightly

    Note : Topping can be changed to match your personal taste & can make the base without the cacao powder if you would rather it plain.
