Banana Juniper Bread

A delicious twist on classic banana bread recipes with the use of juniper berries - a fantastic winter spice (great in gin too!) It also uses barley flour for a springy light texture.

  • 1.

    Preheat the over to 175 degrees

  • 2.

    Grease a tin ready to bake your banana bread

  • 3.

    Using a pestle and mortar grind down the juniper berries

  • 4.

    Prepare your flax eggs but mixing two tablespoons of flaxseed (ground linseed) with 4 tablespoons of water and set aside for 5 minutes (you can add a little more water if too thick)

    In a large bowl, add the barley flour, vital wheat gluten and salt and combine

  • 6.

    In a separate bowl mix the butter and brown sugar

  • 7.

    In another bowl, mash the bananas with a fork and add the flax-egg mixture, Ceylon cinnamon and ground juniper berries and combine

  • 8.

    Once combined, add the banana mixture to the bowl of dry ingredients and combine well

  • 9.

    Pour into your loaf tin and spread evenly

  • 10.

    Sprinkle with sunflower seeds for decoration

  • 11.

    Place in the oven for around 1 hour (60 minutes) keeping a close eye to prevent burning

  • 12.

    Once a skewer comes out clean, remove from the oven and leave to cool in the tin for around 30 minutes

  • 13.

    Once cooled, remove from the tin and slice into thick slices

  • 14.
