Baked with chocolate-y goodness! This banana carob bread is quick and easy to make and will leave you wanting more! Perfect as a Sunday morning breakfast topped with lashings of almond butter and sprinkled with seeds for a nutritious breakfast. It contains only natural sugars making it even better! Need an afternoon pick-me-up? This will do the trick!

  • 1.

    Preheat oven at 175 degrees

  • 2.

    Measure out and prepare all ingredients and line a loaf tin with grease proof paper

  • 3.

    Mash the 4 bananas with a fork in a large mixing bowl

  • 4.

    Add date sugar, vanilla extract, cocoa extract, oil and almond milk and mix well

  • 5.

    Add oat flour, bicarbonate of soda and pinch of salt to the mix and combine well but do not over mix

  • 6.

    Transfer mixture evenly into a lined loaf tin and decorate with slices of banana and pop in the oven. Set the timer for 45 minutes and keep a close eye on it (times may vary depending on your oven)

  • 7.

    Remove after 45 minutes and prick with a tooth pick to check the bake. Cover with foil and place back in the oven for 15-20 minutes.

    Check after 15 minutes. When a toothpick comes out clean (or with just a few dry crumbs) it is ready to take out of the oven and leave to cool in the tin.

  • 9.

    Remove from the tin after 30 minutes and place on a cooling rack and leave to cool thoroughly.

  • 10.

    Once cool, slice into even portions and enjoy with a cup of tea!
