A delicious, warming apple and caramel cake using barley flour - perfect for those Autumnal days.

Enjoy hot or cold, on it's own or with vegan ice cream for the ultimate dessert.

Method
  • 1.

    Preheat oven to 180 degrees and line a loose bottom tine with baking paper (20 cm tin is perfect)

  • 2.

    Mix together flaxseed with 4 tablespoons of waer, stir and set aside for 5 minutes to thicken

  • 3.

    In a separate bowl mix together the flour, ground almonds, coconut sugar, mixed spice and baking powder

  • 4.

    In a third bowl, whisk the almond milk, oil, vanilla and apple cider vinegar together then add the flaxseed mixture and combine

  • 5.

    Add the wet ingredients into the bowl of dry ingredients and combine to form a thick batter

  • 6.

    Spoon the mixture into the tine and spread evenly to coat the base of the tin

  • 7.

    Fan out the apple slices on top of the mixture in the tine starting from the centre

  • 8.

    Sprinkle some coconut sugar on top of the cake and place in the over for around 35-40 minutes until a skewer comes out clean

  • 9.

    Once baked, remove from the oven and whilst the cake is still hot, drizzle over the caramel sauce to glaze the apples

  • 10.

    Leave to cool for a minimum of 15 minutes, slice into 8-12 slices and enjoy!
