About Organic Dark Wholemeal Rye Flour

Rye flour comes in a variety of shades including light, medium and dark. The darker the shade of rye flour the higher the amount of bran and germ is present and the rye flavour is more intense. It produces a dense loaf when used to make bread but can often be mixed with other flours for a lighter end result.

Our dark wholemeal rye flour is sometimes referred to as pumpernickel flour.

Rye has a low gluten content so when it comes to making rye bread with dark wholemeal flour it is good practice to add a little gluten into the mix. This will add elasticity which is highly important in bread making.

The rich flavour lends itself well to fruity loaves and scones for a healthy sweet treat.
