The taste of ceylon cinnamon varies from that of cassia, with ceylon having a mild and balanced flavour, and cassia having a stronger flavour. Both have their benefits, cassia is great when you want a kick of cinnamon flavour in baking, but ceylon cinnamon blends much better with other ingredients, and doesn't overpower other flavours.

Made from grinding the bark of the Cinnamomum Zeylanicum/ Verum, it is often referred to as ‘Real’ or ‘True’ Cinnamon, as many believe this is how cinnamon should be made and it has more prestige than other cinnamon varieties. Ceylon Cinnamon is also low in Coumarin when compared to the cinnamon commonly found in supermarkets.

Did You Know/History : Ceylon Cinnamon was first grown in Ceylon (which is now Sri Lanka) and dates back to 2800 B.C. in China where it is cited that 350g of ceylon cinnamon had the same value of 5kg of silver.

Not only in Chinawas cinnamon a sought after spice, in Ancient Rome it was used both as medicine, a culinary ingredient, and as a symbol of remorse. Emperor Nero burnt a year’s supply of ceylon cinnamon after the murder of his wife which he felt responsible for. At the time 327g of cinnamon was equal to ten months wages.

The manufacturing of ceylon cinnamon was a valued prize and changed hands multiple times as a result. Production of the spice was taken over by the Dutch in the 17th Century from the Portuguese, and when the Dutch heard of cinnamon being grown along the coast of India, they bribed and threatened the local king to destroy all cinnamon crops so that they would hold the exclusive monopoly. However, it didn’t stay in the Dutch’s hands for long – the monopoly ownership changed numerous times, until the 1800’s when cinnamon started to be grown across the globe leading to the downfall of the cinnamon monopoly.

Still to this day Ceylon Cinnamon from Sri Lanka is considered the best cinnamon available due to this historic roots and foundations, which is why it is called ‘Real’ or ‘True’ Cinnamon.
