What is candied peel? Candied fruit or Glacé fruit, can also be know as crystallized fruit. This will be the whole fruit preserved in sugar. More commonly used in baking is candied citrus peel and candied lemon peel. This type of candied peel is often mixed (mixed peel) with fruit for cake recipes. How do you make candied peel? The peel is placed in heated sugar syrup thereby absorbing the moisture from within the fruit and eventually preserving it.
