All of the walnut species are edible, but the walnuts commonly farmed and sold in shops are from the Persian Walnut, the only type that has a thin enough shell. These nuts are rich in oil, and are widely eaten both fresh and in cookery. Walnut go really well in cakes, with the two most popular being the Date and walnut cakes and the banana and walnut cake. Walnut oil is used for salad dressings. Walnuts are also an excellent source of omega-3 fatty acids, and have been shown as helpful in lowering cholesterol.
