We sell dried apricots that have not been treated with sulfur dioxide, this makes them taste a lot sweeter.
We also sell the more traditional yellow dried apricot, these are a little sharper to taste. Sulfur dioxide is a very common natural preservative used on most dried fruit.
Apricot pieces are ideal for cooking and jam making. These are very sharp!!
Dried Apricot Jam (Makes: 4.5kg or 10lb)
925g (2lb) Dried Apricots Pieces
2.8kg (6lb) Golden caster sugar
3.5lt (6 pints) Water
2 Whole Lemons
Was and soak the apricots over night. Place the apricots and water into a heavy bottomed saucepan, add the lemon juice now as well. Simmer for 30 minutes, stirring occasionally to avoid the mixture sticking to the pan. Remove the heat and stir in the sugar, until fully dissolved.
Bring to the boil and cook rapidly until it starts to settle. And then it will need to be potted up after it has totally cooled
